Peanut Butter + Chocolate Rice Crispies

Say hello to the treat that combines the absolute best of the culinary world – peanut butter, chocolate and cereal – in one perfect bar. 

HELLO RICE CRISPIES!  

Sweet, sticky, salty, scrumdiddlyumptios - I just can’t get enough, you just can’t get enough, WE JUST CAN’T GET ENOUGH.

Cue the music. Let’s bake.

 Ingredients

Base
1 cup smooth peanut butter
½ cup rice malt syrup
¼ cup melted coconut oil
Pinch of salt
2 cups puffed rice


Chocolate
1 cup cacao butter
¼ cup ghee or coconut oil
3 tbs maple syrup
1 tsp vanilla extract
1 tsp maca powder (optional)
1 tsp chaga mushroom powder (optional)
Pinch of salt

Shredded coconut to decorate

 

 

Method


Place peanut butter, rice malt syrup, coconut oil and salt in a large mixing bowl and mix well until combined


Add puffed rice to peanut butter mixture and stir to ensure the puffed rice is fully coated. Transfer to a lined baking tray and set aside.

 

To make the chocolate, add all ingredients to a heat-proof bowl over a pot of bubbling water. Ensure that the water does not touch the bottom of your bowl. Slowly mix until fully melted and combined.

 

Pour chocolate over the rice crispy slab in an even layer. Refrigerate.

 

After 5 minutes of refrigeration, sprinkle shredded coconut over the chocolate. Refrigerate for a further 2-3 hours to fully set.

 

Slice and enjoy!

 

*These bars are best eaten straight from the fridge so keep ‘em cold!
